I have a few recipes that over the years have become staples. This oatmeal muffin recipe that is very simple. What I really love about it is that it’s so easy to change up. Sometimes I add chocolate chips. Other times I will add in a grated apple or a mashed banana to give them a bit more moisture. If you like raisins or other dried fruits or nuts, I’m sure they would be great in these muffins. Have fun with this recipe and enjoy!
1/2 cup oats
1 cup milk
1 tsp lemon juice
1 tsp vanilla extract
1/2 cup vegetable oil (you can use melted butter if you like or olive oil)
1 cup sugar
2 cups unbleached white flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 tbsp sugar
2 tsp cinnamon
Put oats, milk, lemon juice and vanilla in a bowl. Let sit for about 1o mins. While waiting mix flour, baking powder, baking soda, cinnamon and salt in a separate bowl.
Add in eggs, oil and sugar to the oat mixture and mix well.
Next add the dried ingredients to the wet ingredients and mix. Don’t overmix.
Finally fill pre-lined or greased muffin tin, approximately 2/3 full. This makes 12-18 muffins depending on how much you fill them. If you like, you can put a little bit of cinnamon sugar on top.
Place in a 350ºF preheated over for 20-25 minutes, or until the centre springs back when pressed. They are really yummy straight out of the oven, but they also freeze well so you can use them in packed lunches.
