
I get bored making the same thing over and over again. I figured, if the kids like zucchini bread and zucchini muffins, then why not zucchini pancakes? So I created this recipe this morning. The verdict? Well, the little one gobbled them up with maple syrup but the “picky one” said they weren’t sweet enough. Personally I love how the zucchini makes the pancakes nice and moist and I would take these hands-down over plain pancakes. To all my fellow zucchini lovers or parents who feel the need to sneak veggies into their kids meals … this ones for you.
Ingredients:
1 cup unbleached flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
2 tbsp brown sugar
pinch of salt
1 small zucchini grated (about 1 cup)
1 egg
1 cup milk with a squeeze of lemon added
Directions:
Combine the flour, baking powder, baking soda, cinnamon, brown sugar and salt in a large mixing bowl
Add the grated zucchini, egg and milk/lemon mixture.
Mix until combined
Heat up a frying pan, add a little butter and cook the pancakes in batches.
I would imagine that these pancakes would also be delicious if you added chocolate chips or even walnuts.
