
What’s better than a banana muffin? A mini banana muffin!! At least according to my kids. 🙂
Here’s quick and simple banana muffin recipe that you can whip together in a few minutes. Feel free to make them your own by adding nuts, seeds or chocolate chips. I made 1/2 of the muffins plain and added chocolate chips to the other half.
Ingredients:
1/2 cup soft unsalted butter
1 cup sugar
3 ripe bananas
1 egg
1 tsp vanilla extract
2 cups unbleached white flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
Directions:
Preheat oven to 350 °F
Grease 2 x 24 hole mini muffin tins
Beat butter and sugar until nice and fluffy (a couple of minutes).
For the recipe I defrosted 3 ripes bananas that I had in the freezer. They look a bit slimy, but they are actually super sweet!
Add the bananas, eggs and vanilla. Mix until smooth.
Finally, add all of the dry ingredients and the milk. Using a wooden spoon mix until incorporate. You don’t want to over mix.
Divide the mixture into the two trays and bake for 15-20 mins. As I mentioned, I added chocolate chips to 1/2 of the muffins.
And there you have it! Beautiful, yummy mini muffins that are great for snacks, breakfast and lunch boxes.
